To warm up your cockles in all this chilly weather we have the perfect recipe (literally!). Give our mushroom soup a whizz in the kitchen and serve with some warm crusty bread for your lunch or serve as a starter to impress your guests!
1 small packet dried wild mushrooms soaked in warm water then squeezed.
(Keep the liquor from this to use in the soup)
1 onion, peeled & finely sliced
1 clove of garlic, peeled & crushed
300g button mushrooms washed very clean not cut
100g mixed wild mushrooms
1L of vegetable stock
50ml double cream
Salt & pepper
Sweat the onion, garlic & dried wild mushrooms in the butter until soft
Add the vegetable stock, bring to boil & simmer for approx 20 minutes
Add the button & wild mushrooms, cook until soft
Add the cream, bring back to the boil
Blend then pass through a fine sieve
Correct the seasoning seasoning & serve
